I’m back with another super easy recipe for you. This is one you can pretty much blitz together within 15 minutes after work if you’re looking for something simple and quick for those hectic days.
The best thing about it is that you really can add anything to it if you just stick to the basics. I normally like to mix my pesto with some pasta, add some broccoli and chicken on the side so it’s not too plain. Other days I like to throw in some cherry tomatoes for that slight citrus kick. It’s really up to you with what you want to serve on the side. If you really don’t have time, just have it on it’s own!
The ingredients are basic and the recipe is simple to follow. Let’s start below!
Here is what you will need:
1 quarter cup shaved parmesan (fresh parmesan usually tastes much better)
1 quarter cup pine nuts
1 quarter cup extra virgin olive oil
1 clove garlic (for those who love garlic like I do, throw in 2 for that extra kick!)
Pinch salt & pepper
Step 1: In a food processor, throw in your garlic, basil and pine nuts
Step 2: While everything is blending together, very slowly add in the olive oil till there is nothing left
Step 3: Once everything is blitzed to a nice creamy consistency, scrap out to a separate bowl and mix in 3/4 of the parmesan. It should look like the picture below
Step 4: This step is up to you. I prefer to mix my pesto with the pasta as I serve each plate however you are more than welcome to mix the pasta all in one go. I think separate works better only because you can season to your liking with salt and pepper. Mae sure you add a little more of the extra parmesan on top when serving!
As you can see, I’ve served mine with some marinated chicken thighs on the side and it was delicious! I hope you guys give it a go and let me know what you think! Also, if you’re interested in my chicken marinade, let me know in the comments below and I’ll post it up.
Tip: If you have any pesto left over, just pop it into an air tight jar/container and leave it in the fridge. It should be good for at least 5-6 days. Also, it’s great for breakfast. Just spread some on a piece of bread and sprinkle some parmesan on top and slide it into the grill for a couple of minutes.
